lilyana's amazing banana muffins

How much does the smell of baking banana bread or muffins take you back to your childhood? Or make you feel instantly cozy, at home, peaceful? It is truly one of the most magical scents in the world!!



This past week, we bought a ton of bananas. You know how life with kids goes, right? One week, they eat 2-3+ bananas a day, and so you buy extra, and then the bananas go spotty like a giraffe. Well, that was my week. I walked into the kitchen this afternoon and saw the banana bowl, and something needed to be done!



The first of the month is always a very busy day for my oily business, so baking was going to have wait. But then, what magical words came from my daughter - "I can make the muffins today!" So, she set to work and pulled up some recipes and after browsing for a bit, we decided all of the recipes we saw needed some pizzaz. So, we combined this one and that one, and then a third, and then pulled out our big bag of organic cacao nibs for extra yum, and she got started and I went back to my home office. A little bit later, the house smelled like heaven and then it was time to taste the goodness. And now, we wanted to share the recipe with you! So, without further ado....


Lilyana's Amazing Banana Muffins


INGREDIENTS

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 3 bananas, mashed (about 1 1/2 cups)

  • 3/4 cup organic cane sugar

  • 1 large egg, at room temperature, lightly beaten

  • 1/3 cup unsated butter, melted

  • 1 teaspoon vanilla

  • 1 cup organic cacao nibs

INSTRUCTIONS

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin liners.

  2. In a large bowl, mix together flour, baking soda, baking powder, salt, and cinnamon.

  3. In a separate bowl, or in your kitchen Aid bowl, mash the bananas. Add the sugar, egg, vanilla, and melted butter, beating on low until well mixed. Gradually add flour mixture to the bananas. Once the flour has been mixed in, use a rubber spatula to stir in the cacao nibs. Spoon batter into prepared muffin cups filling â…” full.

  4. Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean. Cool slightly and then enjoy! Store in an airtight container.
